In 2003, Miriam started frying sesame rings in her apartment on Ocean Parkway. She'd grown up eating them at her grandmother's in Flatbush — the kind that shatter when you bite them, that leave your fingers smelling like toasted sesame for hours.
The synagogue down the block asked if she'd bring a hundred bags to their Shabbos oneg. She did. They sold out in eleven minutes. The rabbi called the next morning.
Today the recipes are still handwritten. Still taped to the wall of our Bushwick commissary. The OU certification is framed next to them.

Twice-baked with white and black sesame, finished with coarse sea salt. The ring your bubbe had in her cabinet.
Savory · Small Batch
Thin-cut and fried in sunflower oil with roasted garlic and a whisper of dried dill. Impossible to eat just one.
Signature · Year-Round
The full everything bagel seed blend pressed into a thin cracker. Oneg-table approved.
Sweet · Limited Run
Braided dough fried light and drizzled with local wildflower honey. Rosh Hashanah in a bag.
Simple · Bold
Kettle-cooked in small batches with coarse kosher salt and cracked black pepper. Nothing hidden.
Old World · Brooklyn Made
Soft-baked with caraway seeds from the same supplier since 1994. The smell alone is the memory.

We ordered 300 bags for Shabbaton and ran out before havdalah. That's the highest compliment I can give.
